You’ve been warned.

But really, since this is a salad recipe, it’s got to be good.  Right?  Salad=healthy?  Am I correct?

Of course I am.

Therefore, here’s one of the best EVER!  One of the traditional Kansas recipes that all Kansas mamas MUST make are Jello salad recipes.  I was shocked and awed when I first visited the state with a college revival team.  Every church family that invited us over for supper/lunch had a Jello salad.  Never in my life, had I seen so much Jello.

The mama of Big Boss was the Grand Poobah of Jello salads.  She had a recipe for every flavor.  And when I made them years later, coaching friends swore that these were not mere salads but desserts.  Hello?

Salad=healthy!  Do NOT forget that.  Desserts have a bad rep so Jello salads MUST be salads and not dessert.

Now that we’re straight on that, here’s our eldest son’s favorite.  His daughter (and our eldest granddaughter) was baptized today and that called for a Baptist potluck.  My contribution was “7 Up Salad”.  Read this and weep.  And also eat.  🙂

Seven Up Salad

2 small boxes lemon Jello or 1 large

2 cups boiling water

When the water is boiling, add the Jello and stir until dissolved.


2 cups cold 7 Up or Sprite

Stir into hot Jello mixture and pour into a serving dish.  I usually use my square Tupperware or a Pyrex 9×13 dish that has a cover.

Refrigerate for an hour or so.  Then stir in 2 sliced and quartered bananas, one cup of small  marshmallows and one can of cold crushed pineapple that has been drained.  (Save the juice.)

Place in the fridge to set till firm.


Meanwhile, for the Topping…in a small saucepan, stir together:

2 Tablespoons flour

1/2 cup sugar


1 cup pineapple juice (add water if you don’t have quite 1 cup)

1 egg, slightly beaten

Over medium heat, stir and cook till thickened.  Add 1 Tablespoon butter. Cool in the fridge.

Once the cooked Topping is cold, add a small carton of Cool Whip.  OR whip 1 cup of cream until stiff.

Add the whipped cream/Cool Whip to the cooled Topping and spread over the firmed Jello.


Grate Velveeta over the top.  I like lots. I’ve tried Cheddar.  Ick. Not sure about American but it might work.

If you’re seriously trying to watch carbs and calories, sub in diet Jello, 7 up, Cool Whip and maybe Splenda?? Theoretically, it should work.  Haven’t tried it yet tho.  Pondering tho….
