Want an entire lunch in one bowl?

That’s what was for lunch today!  AND, I had all or most of the ingredients for my lunch in a bowl.  Yeah, it was a salad day..altho I did partake of some rib eye steak that I smoked yesterday over pecan wood…but today, it was mainly salad.

  I saw a version of this  a while back on Sandra Lee’s Semi-Homemade TV show on Food Network and a my old next-door neighbor had sent a similar one.  So I combined the two and added a bit of my own ingredients. It’s rapidly become a favorite among my female relatives…the guys, not so much.  This salad is perfect for Easter menus. 

 

 

Spinach-Strawberry Salad

Combine all ingredients in a large salad bowl and pour a poppy seed dressing over it.  The amount of dressing is up to your taste.  I like lots. 😀

Fresh Spinach

Spring Greens (romaine, iceburg, red leaf, arugula,etc.)

Fresh Strawberries, sliced

Fresh blueberries

Roasted and chopped pecans (walnuts are ok too) (for more taste, place pecans in a 350° oven for 5 mins. and no more!)

Wisconsin Bleu Cheese or Feta

Mandarin oranges (canned is usually what I have on hand but those new midget oranges might be good too?)

Fresh mushrooms, sliced

Note: This salad doesn’t store well so make up just enough for the occasion.

  5. Oooh this looks good. I might have to substitute balsamic dressing for the poppy seed though, just because I love balsamic on everything. I think you have such a good mix for a salad though! Now if only it would hurry up and get warm so I can buy all these fresh ingredients at a farmers market!

    I also like low cal raspberry vinegarette on it. And since I have found that I have an alergy to dairy, I’ve really started enjoyed salads without cheese! Nuts or seeds will provide the protein and there is much less fats and calories. A few sprinkles of dried cranberries also are great. Then another fav healthy dressing for us is olive oil, meyer lemon juice (the best), sea salt, coarse ground pepper, and a little stevia. So fresh and never covers up the flavor of the ingredients! 🙂
