Just one more…

I know. I know. You’re thinking, “For Pete’s Sake!!! What now?”

And you’re probably sick of nut stories.  But seriously, this is NEWS! Just bear with me for One More Post about my pecan tree.

Remember it? The one my father-in-law said wouldn’t grow.  It did!

The one my father-in-law said would never have pecans even if it did grow.  It did!

The one my father-in-law (and BTW, my dad also) said even if it did produce pecans, they wouldn’t make “real” pecans.  Guess what?  It did!!!!!!!!!!!!

This year, I have real, filled-out pecans…not just the hull with  a shell and nothing inside it, as in the past 3 years.  Nope.  I am the proud owner of a real pecan.  Bona fide pecan grower, I am.

I finally raked up the nerve to cut one open, like I saw my dad do a million times, to check and see if the pecan was filled out.  That was THE test every fall.  He’d go tree to tree, pick up a pecan, flip his pocket knife open, cut into the pecan horizontally and check for a fully formed pecan meat.  And only then would he declare that we would have a good crop that fall or “nuttin’ honey”.  It was a tense time as everyone held their collective breath/s, waiting for the good news. Or the bad news.

Seeing as how I only have 10 pecans so far, cutting into one to check it meant I was losing one tenth of my crop.  But there it was….a fat meat, still green but that “could” mean the Other Nine may have mautre pecan meats also.

To have a yummy tasting pecan, fully matured, around Thanksgiving time you pick up only the pecans that have fallen and have been fully released from the hull, which is black by then.  If one has fallen but is still in the hull, chances are pretty good that it’s shriveled up inside and tastes bitter.

So I’ll let the remaining nine pecans that are still in their green hulls dry naturally and see if they’ll fall out of the hull on their own.

I’m back to the waiting and watching.  Yeah, kinda like being PG again.

Are you sick of nuts by now?  Have I turned you completely off of EVER eating a pecan again? Or picking up an acorn?  Sorry.  I just can’t help myself. Bear with me as I’m sure this phase will pass.  Until next year at least.

Reminds me of one of my favorite scriptures that was in a Christy script of the episode, “The Hunt”.  Miss Alice is reassuring the child, Sam Houston, who is grieving over the loss of his dead dog, that God loves all of His creatures. and while we don’t understand all of His ways,

“No eye has seen, no ear has heard, no mind has conceived what G-d has prepared for those who love Him.”     1 Corinthians 2:9

I can just hear BB’s dad and my dad laughing from Heaven and saying, “I’ll be jiggered.  She did it.”  Well, I didn’t. G-d did.  I just helped.  Never question what the Lord can do.  Ever.  🙂

With on the pecan pies, praline, toppings…don’t think I have many dessert recipes that DON’T call for pecans. And if they don’t, I add a handfull anyway. One of these days, I’ll share my Grandma’s pie recipe…not like any pecan pie recipe I’ve ever seen!!!!
